What We Bring to the Table

Esca serves groups from 100 to 1,000 people. We use the finest ingredients available, sourcing local and organic wherever possible. We strive to work with cast and crew’s ever-changing tastes and dietary preferences. We can provide any of the following:

  • Short Order Breakfast: As well as all the traditional breakfasts of eggs, bacon, sausage, and hash browns, we also offer quesadillas, burritos, breakfast sandwiches. Available are daily specials ready to serve for those on the run. Our breakfast table always includes fresh squeezed juice, fresh fruit smoothies, and homemade breakfast breads.
  • Lunch/Dinner: Our daily menu consists of:
    • A choice of three hot entrees: two with meat, fish or chicken and one vegetarian option.
    • One starch
    • Two fresh vegetables
  • Salad Bar: The salad bar will vary daily and will compliment our hot food selection. Included in the salad bar will be:
    • Minimum of one hot appetizer
    • Soup and fresh bread
    • Eight-ten salads and condiments
    • Assorted dessert selections
  • Background Meals: For cast members not eating at the catering truck, lunch will consist of one meat protein, one veggie protein, one starch and one vegetable.
  • Second Meals: For those extra-long days we will provide (determined by the time of day) one of the following: Meal with two hot entrees, (one meat/one vegetarian), a choice of two vegetables, starch, soup, salad, fresh bread, a walk-away dessert and hot and cold beverages. Or a short-order breakfast as mentioned above.
